The Story
Appellation: Sleeping Lady Vineyard, Yountville
Composition: 100% Cabernet Sauvignon, 100% Clone 191
Single-Vineyard: Ad Vivum Cabernet Sauvignon is made from one small micro-block of vines at Sleeping Lady Vineyard, in Yountville, Napa Valley. The vines are located at the vineyard’s uppermost western perimeter along the Mayacamas Mountains. Row orientation is southwest-northeast. The vineyard is sustainably and meticulously farmed by the Bettinelli family.
Soil: The soil profile shows Keefers dark gravelly-sandy clay loam of alluvial origin.
Winemaking: The fruit was hand-sorted twice: once in the vineyard, and again at the winery, where it was gently de-stemmed. The must was cold-soaked for 6.5 days at 50°F prior to the onset of fermentation. Following 30 days of maceration on the skins, the free-run wine was aged 18 months in 65% new French oak barrels. The wine was bottled unfined and unfiltered.
