Amyndeon plateau. Amyndeon viticulture zone. North-western Macedonia. "Hedgehog" sub-region. 690m altitude, with northern exposure, facing lake Petron and mount Voras. 69ha of Linear, privately owned vineyard situated at an altitude of 620-710m. 

Location: ‘’Hedgehog’’ sub-region. Amyndeon plateau.

Vineyard: 87ha of Linear, privately owned vineyard situated at an altitude of 620-710 m.

Vineyard Designated for: 2,1 ha

Soil: Sandy – sandy clay soil over limestone of excellent drainage.

Harvest: Manual harvesting in 15 kg capacity picking baskets. September 6th

Density of Pl/tion: 3.700 shoots / ha.

Yield: 34 HL/ha, post to green harvest & selection.

Vinification Method & Ageing:
Destemming, no crushing, cold soak - skin contact under controlled conditions, alcoholic fermentation at gradual increasing temperatures, maintenance of wine "sur lie" for eight months with regular stirring. Eighteen months in Allie - Bertrange new oak casks medium toast. No treatment or filtration before bottling and eighteen months in bottles.

Vinification: Destemming, light crushing, cold soak– skin contact under controlled conditions, alcoholic fermentation at gradual increase temperatures, maintenance of wine “sur lie” for many months with regular stirring.

Ageing: 18 months in Allie – Bertrange oak casks medium toast and 18 months in bottle. No treatment or filtration before bottling

Tasting Characteristics:
Opaque ruby color. Fine, rich, intense. Black crystalline fruits, cassis, leather, cocoa, spices. Full body, creamy, with tasty ripe tannins. Well balanced and round with excellent development in the mouth and long aftertaste.  

Harmony:
Excellent assortment with red juicy meats, barbecued with spicy sauces. Adorable combination with chestnut and plums cooked meat. 

Best served at 16-18C. (60,8-64,4F).

Written Notes

18 months in Frenh oak and 18 months in bottle. No filtration. pH 3.44, TA 6.3 g/l.
Deep black cherry colour. Fragrant, restrained dark-fruit aromas and a delicate peppery spice plus something darker and almost tarry. A complex aroma. Powerful and concentrated and yet does not lose its freshness so that the finish is mouthwatering and moreish. Dense, smooth, chocolatey tannins (flavour and texture). One for the long haul although it is already balanced and harmonious.
