Historia

Grapevines have been cultivated in Hermonville since the 12th century. We are the fourth generation to work on the estate.
Founded in 1919 by our great-grandfather Alfred, he created his own wine press and sold his wines to the merchants of Reims.
The estate has grown extensively over the years.
After completing our winemaking studies and several years of professional experience, we took over the estate in 2005 and decided to produce our own wines in oak barrels so as to promote the values of our exceptional heritage.

Frédéric and Rodolph look after 8 hectares of vines mainly in Hermonville. 4.5ha Meunier, 2ha Chardonnay and 1.5ha Pinot. Average vineyard age is 45 years. Traditionally they sold all their grapes to the big houses, but in 2005 they decided to start there own business. Frederic spent some time with Anselme Selosse and no doubt this has had a lasting effect on his philosophy towards wine making. All the wines are fermented and aged in barrel with battonage, and malo-lactic fermentation is blocked for all the cuvees. About 70% of barrels are 5 years or older.

"With almost 8 Ha of land, our vineyards are primarily located in Hermonville, whose magnificent, south-east facing hillsides are flooded with sunshine. The upper hills are covered in sand-loam soil while the lower areas are loam, clay and sand. These well-draining soils contain high levels of minerals which force roots downwards to feed the vines deep within the soil and saturate the sap with mineral elements."

Philosophy

Wine - like life - is marked by encounters which build character and guide us through our life journey. Vines draw life from the very heart of the soil and pass on its characteristics into the fruits. Our role consists of highlighting the potential expressed in wine. The wines of Champagne - gold is to be found not in bottles, but in our vineyards.

This is why we work the land and treat it with the greatest respect, in order to harvests the best it can possibly offer. We use organic amendments, work the soil and lay grass in certain parcels and we fight insects or vine disease in an environmentally responsible manner. With our strong commitment to sustainable wine-production, we do our utmost to preserve the natural balance of this biodiversity so dear to us.

Vineyard plots

All plots selected to produce our vintage wines are located in Hermonville. The age of these parcels varies from 15 to 65 years, with an average age of 45 years. We privilege the replacement of missing vine stocks so as to ensure the durability of our old vines which provide grapes of very high quality.

Our wines are all produced in oak barrels. Barrels are of varied capacity, origin and age in order to reveal the diverse range of characteristics of our wines and the complexity of their blends, essential to the spirit of champagne. Immediately after the pressing process is terminated, the musts are placed in barrels to ferment. They are left in contact with their lees for 6 months and stirred at varying intervals depending on the year. Malolactic fermentation is prevented in order to preserve the freshness of the wines after a long ageing process within the cellars. Instead, once bottled our wines mature slowly for 5 or 6 years for the youngest and between 8 to 10 years for vintage wines. This slow development allows our wines to fully develop for guaranteed maximum pleasure.

Our desire to let our vineyards express themselves freely has enabled us to create new vintage wines.
Our Blanc de Noirs “les Voirmissa” and “Blanc de Blancs les Moineaux” began developing in our cellars back in 2013. Ungrafted vine parcels will be turned into wines in 2015 though nothing is set in stone; other vintages will most certainly appear over the coming years and be ready for tasting in the next 10 to 15 years. To make a good wine takes time!

Welcome to the Tastingbook, the world's first intelligent wine-tasting tool and social wine community.

It is easy and fast to use, and I am happy to guide you through it.


1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.



If you have any difficulty in navigating the site you may easily get help by clicking the support button on the left side of the page
