The Story

Dosage: 5.5g / l of sugar (MCR)

Terroir: We pick and vinify only grapes from our own vineyard. This one is worked according to the notebook loads of the Champagne vineyard. The Domain is certified High Environmental Value (HVE). The average age of the vines is 31 years old. The vintage Carte Blanche Extra Brut is the blend of wines from 3 grape varieties Champagne (33% Pinot Noir, 33% Pinot Meunier and 33% Chardonnay) and 7 harvests. 11 crus come into its composition: Ludes-Le-Coquet, Mailly-Champagne, Chigny les Roses, Taissy, Verzenay, Faverolles and Coemy, Treslon, Pévy, Verneuil, Vandières, Port to Binson.

Elaboration:
-Manual picking
-Qualitative approved press
-Alcoholic and malolactic fermentation in stainless steel tanks thermo regulated

Tasting: This wine shows a beautiful aromatic complexity where the dried fruits and white fruits agree. Champagne aerial, subtle, the mouth is dense and fresh. This vintage will delight in the company of the products of the sea: Tartar of bar, raw oysters, langoustines, carpaccio de Saint Jacques but also vegetables (asparagus soup).
