Rypäleet poimitaan käsin erikseen ja jokaisesta lajikkeesta valmistetaan lajikeviini. Viinit kypsyvät vuoden ajan ennenkuin ne sekoitetaan maailman arvostetuimman viinintekijäkonsultin, ranskalaisen Michel Rollandin ohjeistamana. Tämän jälkeen viiniä kypsytetään uusissa tammitynnyreissä vielä 6 kk:tta.
