Blend of 70% Grillo and 30% Sauvignon Blanc. Both varieties receive 12 hours cold skin contact prior to pressing to extract the maximum flavor potential from the skins. Fermentation is conducted at 12-14°C for 20 days to conserve fruit flavor and enhance the flavor profile
