VINIFICATION
Long pre-fermantative macerations that allow to extract all the primary scents of the grape.
Separate alcoholic fermentation takes place in open, 600-litres (156 gallons) french oak barrels. After that, unpressed wine is separated, taking only that which has been stepped on.

THE HARVEST
Red wine elaborated from ancient vineyards, more than 70 yeards old, and a production under 2.000 kg. (4,400 lb), cultivated in small plots at Cantabria’s mountain range. Grapes from the Tempranillo variety, hand-picked, grain by grain, using tables to select by weight and vibration.
