The Story
THE HARVEST
Red wine elaborated with the Mazuelo grape variety and other indigenous types. All of them have been hand-picked, grain by grain, using selection and vibration tables. Destemmed grapes, not squeezed, macerated in stainless steel vats, with temperature control and long intracellular fermentations. The pumping over of the grape juices has been conducted in a natural way, by gravity, using the submerged cap as an assistance.
VINIFICATION
The final extraction of the wine has been made using a neumatic press, later passing it into french oak barrels, where the malolactic fermentation takes place. Once this is over, the wines are transfered into new french oak barrels.
THE AGEING
The ageing stage lasts for 8 months in the barrel and an indefinite time in the bottle.
TASTING NOTES
Nose: Intense red fruits with great harmony and complexity, with black olives nuances.
Palate: In the mouth it’s oily, elegant and persistent in the palate.
