The Story
Château De La Soujeole is located in the Malepère appellation, bordered to the west by Castelnaudary, to the east by Carcassonne and to the South by Limoux. The vineyard is planted near the famous « Cité médiévale de Carcassonne » (XIIth Century). Moreover, the stones used to build the “Cité de Carcassonne” come from the Malepère soils (« père » of Malepère means « stone » in old French). La Malepère is a region where the influences of the South-West (Oceanic climate) meet the Mediterranean climate. It is ideal for the Cabernet Franc, thanks to the climate less hot and more humid than in the rest of South of France.
Thanks to the influences of the Mediterranean Sea we have high temperatures during Summer and Autumn allowing us to harvest ripen grapes and so reveal wines with more concentration. The estate is committed to biodynamics. The Grand Vin is a selection of the best barrels of the estate.
Origin: AOP Malepère, Carcassone, Languedoc-Roussillon
Blend: Merlot, Cabernet Franc, Malbec (Cot)
Vinification: The grapes are harvested at optimum maturity. The harvest takes place very early in the morning to enjoy the low temperatures. This keeps the aromatic potential of the raisins. On arrival in the cellar, the grapes are sorted carefully, all the operations are done at infinity and with a control of the temperature to reduce the risks of oxidation. The three grape varieties are vinified separately. The grapes are carefully pressed after maceration for a few hours, the juices are tasted to keep only the most qualitative. The must is kept a few days on cold mud in stainless steel tanks, a settling a place about 5 days later. The fermentation begins in tanks and then continues in the barrels of French oak, it spreads out about twenty days, around 17 ° C for the preservation of the purity of aromas. Finally, after a light collage, bottling a place early enough to preserve the fresh and fruity character of the wines.
Tasting notes: This rosé presents a deep and brilliant robe. In the nose we find notes of crushed strawberry, violet. The mouth is ample, round and fresh. Finale is lively and elegant, we find notes of small red berries. The Grand Vin Rosé develops intense aromas of jammed strawberries and violet with small red berries notes.
