The Story

All the fruit for the Terroir Caché was handpicked, sorted and de-stemmed. After 5 to 7 days of cold maceration, the components of the blend were fermented separately in small batches and 5 to 8% of the juice from every batch was drained from the skins to improve colour, structure and intensity of flavours. Written Notes

A Bordeaux blend of  organically grown Merlot (47%), Malbec (29%) and Cabernet Franc (24%) from Locust Lane, Felseck and Rosomel vineyards. After destemming, 5-7 days cold maceration and after fermentation 7-10 days postmaceration. Each variety was vinified separately and the blend aged 20 months in 100% French oak (55% new, 5% 2nd fill, 10% 3rd fill). TA: 6.58 g/L; RS: 0.85 g/L; Alcohol:  13.5%.

Deep, dark, purple colour. Very intense nose with loads of layers – fruitcake, burnt wood, vanilla, spices, cacao, and preserved black berries. Full-bodied, good acidity, savoury style with refined and well-integrated oak, ripe silky smooth tannins and mouthwatering lingering savoury finish. JL 93p (3/2022)
