Cabernet Sauvignon at Longview is located on a north facing slopes with a north-south row orientation. This site is perfectly suited as the soils are shallow, sandy loam, with ironstone and quartz throughout the topsoil. These are the oldest vines on site; planted on own roots and spaced at 1m by 2.4m. These factors each contribute to reduced vigour and yields, which combined with the warmer conditions during the day and cool seabreeze influence during the night, ensure even ripening for Cabernet Sauvignon in the Southern part of the Adelaide Hills.

The fruit was hand-picked to minimise fruit damage, then fermented on skins for 7 days. After malolactic fermentation, the wine was aged in old and new French Oak Hogsheads for 18 months.

The Story

The Devil’s Elbow hairpin bend on the old Adelaide freeway is memorable for its unexpected shift in direction. Our Cabernet echoes the feeling of excitement that travellers often experienced on their first attempt.

This wine is a rarity in the Adelaide Hills as the varietal is seldom planted but Longview's location and unique micro-climate allows the fruit to enjoy a long ripening period.

The wine is classic Cabernet, demonstrated through its restrained, medium bodied palate of wild cherries, capsicum and fresh herbs. Firm and persistent tannins balance this melange of flavours and guarantee an exhilarating and lengthy finish.

Wine Information

2015 produced very low yields, however what we did get was exceptional, with fruit intensity and acid balance. The growing season was mild and very dry, which resulted in amazing flavors in the berries at low sugar levels. Cabernet Sauvignon vines maintained good canopies right through to the 2nd of April when they were harvested in cool conditions.
