The Pascal Jolivet Domaine covers 49.50 acres in Sancerre, with vineyards close to the villages of Bué, Verdigny and Ste Gemme. 8.60 acres of Pinot Noir.

The Pinot Noir Grapes are sorted by hand and then destemmed. After 10 days of cold maceration, the fermentation starts naturally and lasts 12 to 15 days. The wine is matured in stainless steel tank.
