Winemakers Notes
The 2016 Reserve White is 100% Sauvignon Blanc. These grapes come from specially isolated spots, within our Sauvignon blanc vineyards on our Uitzicht Farm. We hand sort bunches, ensuring only the best fruit is used for this wine, after which they are whole bunch pressed. The must then undergoes spontaneous fermentation in 300l French oak casks, 95% being new oak and 5% second fill. The wine is aged for 12 months in barrique, on the gross lees, before it is racked into stainless steel tank to age for a further 4 months.
Tasting Notes
This wine has a fresh and lively nose, with layers of granny smith apple, elderflower, citrus peel and flintiness. The palate is fresh and steely, with great fruit concentration and complexity. This wine has good texture and is well balanced, with a long finish. An elegant wine which would be best rewarded with drinking from 2018 until 2023.
