Rypäleet Reserva Carmenere- viiniin kasvavat Colchaguan laakson tarhoissa, joissa ne kypsyvät hitaasti täyteläisiksi ja aromikkaiksi. Rypäleet poimitaan käsin. Reserva Carmeneresta 50% kypsyy 6 kuukautta ranskalaisessa tammessa.
Santa Helena on tuottanut viinejä vuodesta 1942 lähtien, ja on nyt Chilen kymmenen suurimman viinien vientiyrityksen joukossa.

TUOTTAJAN KUVAILU:

Tumma violetinpunainen.

Tuoksu
Hedelmäinen, mausteinen ja lempeän pippurinen.

Maku
Täyteläinen, tasapainoinen, paahteinen ja pehmeän tanniininen.

TARJOILUSUOSITUS:
Viini on parhaimmillaan tarjoiltuna 17 - 18 asteisena. Viini kannattaa avata vähintään puoli tuntia ennen tarjoilua.

RUOKASUOSITUS:
Monikäyttöinen viini liharuokien kumppaniksi tai sellaisenaan nautiskeltavaksi.

resepti: Alex Nurmi

400 g marmoroitunutta ulkofileetä
100 g kirsikkatomaatteja
100 g herkkusieniä
2 punasipulia
Pekoni-sipulipaistos
200 g uusia perunoita
150 g pekonia
100 g siitakesieniä
muutama kevätsipulin varsi

Grillatut vartaat ja pekoni-sipulipaistosta
Leikkaa kaikki raaka-aineet varrastikkuihin sopiviksi paloiksi ja pujota ne vartaisiin.
Grillaa mehukkaan kypsiksi ja tarjoile peruna-pekonipaistoksen kanssa.

Pekoni-sipulipaistos
Leikkaa pekoni pieniksi paloiksi ja laita ne kylmään pannuun. Kuumenna pannua jolloin myös pekonin rasva alkaa sulamaan lihasta pois. Leikkaa pestyt perunat ohuiksi viipaleiksi sienten kanssa ja lisää ne paistokseen.

Paista niin kauan kunnes kaikki raaka-aineet ovat rapean kypsiä ja mausta lopuksi mustapippurilla sekä suolalla ja ripottele pinnalle kevätsipulia.
