The Story
From the vineyards of Monte Cariano at the heart of the Valpolicella Classico, south of the village of San Pietro in Cariano.
SOIL
Limestone and clay.
COMPOSITION
60% Corvina, 30% Rondinella, 5% Corvinone, 5% Croatina.
WINEMAKING
Selected bunches are harvested in crates mid September and left to raisin in well-ventilated drying rooms until late January. Once the drying process is over, the grapes are pressed and fermented for about four weeks. After this long fermentation the wine is decanted and transferred in oak barrique where it stays for 18-24 months before bottling. Fining in bottle for about another year.
STYLE
Deep ruby red in color with charming fragrances of wild cherry, black cherry, chocolate and spicy notes. A full-bodied wine, round, warm, harmonic and persistent on the palate.
FOOD PAIRINGS
An elegant, noble wine, to be enjoyed alone or as an accompaniment to an important meal with grilled red meat, venison, game and mature cheeses. Try it also with dark chocolate.
