The Story
VINEYARDS
From the vineyards of Monte Cariano at the heart of the Valpolicella Classico, south of the village of San Pietro in Cariano.
SOIL
Limestone and clay.
COMPOSITION
60% Corvina, 20% Rondinella, 20% Corvinone
WINEMAKING
Only the best bunches are harvested, destemmed and pressed. The must is placed to ferment in small steel tanks at 25-28° C for 12-14 days. Malolactic fermentation in larger tanks follows. After two rackings, the wine is transferred to barriques where it ages for 12-16 months. Fining in bottle for 6 months.
STYLE
Ruby red, almost granate, with intense, penetrating aromas of currants and blackberries and hints of toasted almonds and vanilla. Full, ripe and round on the palate, with a long finish.
FOOD PAIRINGS
Excellent with red meat, polenta and mushrooms, mature and rish cheeses. To be served at 18-20°C.
