The Story
The Drappier vineyard, which extends over more than 75 hectares. represents the essential. typical and authentic nature of our cuvees. Since 1808 our family has applied its expertise in selecting parcels of land rich in limestone and particularly well exposed to the sun. They produce expressive and aromatic wines Champagne Drappier’s principal growing areas are Urville, Bergeres. Pierry. Ambonnay, Mareuil-Sur-Ay and Cramant.
In an area rich in history and tourist attractions. our cellars. built by the monks of Clairvaux Abbey in the 12th century. are located only 14 kilometres from Colombey-Les-Deux-tglises. the resting place of Charles de Gaulle, a former customer of Maison Drappier
Blend: Chardonnay 100%
Vineyards: Avize, Cramant, Chouilly
Vinification:
- Made exclusively from first pressing.
- The base must flows by gravity and thus without pumping in order to keep its aromas and freshness.
- Low level of sulphites.
- Unfiltered.
Dosage: 4 g/L
Ageing: on "lattes" for 5 years
Tasting notes: Pale yellow, fresh aromas of white flowers and honey. Notes of vanilla, nuts and mature grape fruits. Long length in the mouth. Complex and intense with slightly toasted notes. A very classical style with a good minerality.

Vinification of the Blanc de Blancs cuvée
Only the juices from first pressing – the cuvées - are used
Mechanical low-pressure presses
Use of gravity to avoid pumping, thus avoiding oxidisation
Minimal use of sulphur
Natural settling
Alcoholic fermentation for roughly 2 weeks at low temperature
Then total and natural malolactic fermentation
No filtering
Assemblage – 100% of the wines are made in vats in order to preserve as much freshness as possible
After bottling, the cuvée is aged for 2 to 3 years sur lattes (on laths).
Dosage: 8 g/l
Tasting notes
The nose brings to mind white peach and pear but also more floral notes such as peony. On the palate a mineral Champagne, lightly biscuity, creamy, supple, seductive.
Serving suggestions
Ideal as an aperitif. At the table it goes superbly with white meats, chilled smoked salmon with citrus fruits, tagliatelle with scallops.
Serve at 7°C.
