The Story

The Bruno Paillard N.P.U.- « Nec Plus Ultra » was born from the idea to create the greatest possible Champagne wine, whatever the constraints. To do this, the most extreme choices have been made at each step of the production of this outstanding Champagne wine.
This foolish dream gave birth to the N.P.U.-“Nec Plus Ultra”.

Up to this point 1996 has been considered a fantastic vintage which produced classic wines; the best since 1990. A long, dry summer produced grapes of record ripeness with record acidity. Some, including myself, question how the 1996s are aging. Written Notes

A one-of-a-kind champagne from an equal blend of Chardonnay and Pinot Noir. Fascinating nose of tart red berries, dough, bread and citrussy elements. High concentration and weighty masculine style with some deliberate oxidation signs. Requires some time in the glass to open up. Balanced acidity and fine persistence on the finish. The aftertaste reveals minerally and lemony tones. More a wine than a champagne.

(Only 6000 bottles made) Pale golden, tiny bubbles. Apples, yeast and minerals. Touch of smoke and almost chalky. Rich palate, fresh acidity and superb mousse. Lovely balance, very together and a slightly bitter mineral and apply finish. Very long indeed.
