"The 2007 Ayala Blanc de Blancs Brut Millesime is a fine follow-up to the lovely 2005 version I reported upon last year. The bouquet is deep and youthfully vibrant, wafting from the glass in a mix of lemon chiffon, pear, chalky soil tones, bread dough, spring flowers and incipient notes of crème patissière. On the palate the wine is full-bodied, crisp and very elegant, with a fine core, frothy mousse, lovely focus and nascent complexity and a long, poised and snappy finish. Fine juice in the more ethereal style of Blanc de Blancs that will make this an excellent aperitif Champagne. 2014-2030."

"This Blanc de Blancs has shed its initial minerality and gained rich fruitiness. Apricots as well as more citrus flavors abound, bringing out a full and round character. From Grand Cru vineyards on the Côte des Blancs, this is ready to drink."

"(made from fruit grown in the Grand Cru villages of Cramant, Avize and Oger and the Premier Cru villages of Cuis and Vertus): Pale gold. A lively, sharply focused bouquet evokes fresh citrus fruits, quince, white flowers and honey, with suave leesy and mineral qualities building in the glass. Rich yet lively and precise, boasting strong cut to its Meyer lemon and yellow apple flavors. The mineral and leesy notes come back on the finish, which lingers with excellent clarity and tenacity. Disgorged in December, 2013."

"A rich, toasty version, backed by vibrant acidity, with flavors of brioche, yellow plum and apricot fruit, toasted hazelnut and spun honey, accented by spice and graphite notes. Long, zesty finish. Drink now through 2027."

The Story

Our Blanc de Blancs is produced in small quantities in exceptional years only and fully expresses the superb calibre of great Chardonnay from the best crus of the Côte des Blancs. After 6 years of ageing in our cellars, remarkable minerality and low dosage make this an outstanding wine that can accompany a variety of flavoursome dishes including poultry and fish, or be served on its own to celebrate a special occasion.

Ayala currently owns 35 acres in Champagne. Thanks to its privileged location in the heart of the Grand Crus of Montagne de Reims and their link to Bollinger, they also have unique access to top quality grapes.

Everything from grape reception to vinification, aging, riddling and disgorgement is done at the Ayala cellars. The Blanc des Blancs rests in the cellar for 6 years after disgorgement, in order to develop complexity, intensity and roundness on the palate. 2005 is the first vintage vinified in the entirely renovated Ayala cellars.

Pale gold in color with a lively glint, with a very fine necklace of bubbles. Lovely maturity on the nose with charming citrus, pineapple and white flowers. A fresh, pure and intense palate, balancing structure and creaminess, and leading to a long finish. A unique Vintage offering.

Vintage 2007

An unusually warm spring led to early flowering and initial optimism, which soon gave way to disappointment following one of the murkiest summers on record. Overall, 2007 was a difficult vintage saved by last-minute sunshine in late-August. Mildew and rot were the main culprits of the harvest, and the level of gluconic acid rocketed. The harvest began early, on August 24th, and was abundant in volume averaging 14,242 kg/ha. Pinot Meunier posed the biggest problems and Chardonnay clearly outperformed the rest. Many of the iconic prestige cuvée blanc de blancs were successfully produced, such as Taittinger Comtes de Champagne, Ruinart Dom Ruinart, Billecart-Salmon Cuvée Louis and Salon Le Mesnil. Some blended prestige cuvées such as Louis Roederer Cristal and Philipponnat Clos des Goisses were also made. Champagnes from 2007 are typically high in acidity and restrainedly classic in style, but lack the spine and strength of the greatest harvest years. Even if the vintage only receives three stars, its best Chardonnays are well worth seeking and storing.
