Olivier Collin’s Champagne is in the village of Congy in the Sézannais, south of the Côte des Blancs. Collin gives credit to Anselme Selosse for inspiring him to become a Champenois vigneron. He did a training period with Selosse in 2001, which he describes as "one of those encounters that changes your life. Selosse is the one who drove him to take back the portion of his family estate that was rented to Pommery.
In 2003 when he had his first harvest, the grapes had been badly hit by frost and he had to sell its entire production to the negoce. However Collin succeeded in making his first wine in 2004, from a 1.2-hectare parcel in a vineyard called Les Pierrières, in the nearby village of Vert La Gravelle, the vines here are about 30 to 60 years old. In addition, he has some other Chardonnay parcels in Vert La Gravelle and Congy, as well as parcels of Pinot Noir that are between 35 and 60 years old.
Collin farms his vines organically and winemaking here is as natural and non-interventionist as possible. Fermentation is carried out with indigenous yeasts. Both the alcoholic and malolactic fermentation are carried out in three- to six-years old barriques. The wine is not fined or filtered. Collin continues to experiment relentlessly, and even though his wines are often the objects of controversy, they are anything but consensual.
His wines exhibit a deeply vinous presence and a firmly pronounced chalkiness, emphasizing the expression of terroir over fruit flavor.
Salon 2012 / “A rollercoaster year in the vineyards with hopes for a quality crop only rising at harvest time. Salon initially wasn't promising a vintage, but changed its mind having come up with something instantly rewarding. Bright, sweetly fruity nose on the sweet green fruit side: lime, pear drops, licorice, jasmine and fragrant orange blossom tones. A flick of vanilla complements the whole. The palate has a silky flow of volume yet a firm backbone of brisk acidity enhancing the notion of explosive fruitiness. The chalky mineral bite comes forward on the long, intense and dry finish. This wine hasn’t moved a lot in the past year, promising longevity. Disgorged 3/21; dosage 5g/l”

“In the name of God and the Holy Virgin shall this book be opened…” It was with these words, written by Nicolas Ruinart on 1 September 1729, that the House of Ruinart was officially established. A true entrepreneur, Nicolas Ruinart fulfilled the ambition of his uncle, the Benedictine monk Dom Thierry Ruinart, a close friend of Dom Pérignon, to make Ruinart the premier Champagne house.
A resounding success was made possible by the perceptiveness of its initiator, Dom Ruinart, to whom the Ruinart House paid tribute in 1959 by creating the historic, prestigious Dom Ruinart vintage.
This beautiful Dom Ruinart 2010 was in perfect condition. Decanted 15 minutes. Very deep, clear, almost colourless. The nose is marvellously toffeed, with citrus and pure, ripe mineral-rich flavours. Beautiful, vivid, creamy and wide mousse and a mouth-filling weight of rich fruit. Lots of dense, full, exotic flavours and a touch of honey depth. Beautifully concentrated and powerful, yet balanced and gracious. Very charming, intense and vigorous wine. 96 points

The 2012 Cristal is another absolutely stellar wine this flight of recent releases. Rich, vinous and beautifully textured, the 2012 has been nothing short of magnificent on the three occasions I have tasted it so far. In the glass, the 2012 is radiant and luscious, yet it possesses remarkable transparency and striking aromatic depth. Light tropical notes develop in the glass, giving the 2012 a real feeling of exotic beauty. The 2012 is the first vintage of Cristal done with 100% organically-farmed fruit, an approach introduced gradually starting with the 2007 that has profoundly changes Cristal, especially in its aromatic breadth. Two thousand twelve is the vintage where endless trials and experiments in farming and winemaking are fully realized. The 2012 is just stunning. It’s as simple as that. Dosage is just over 7 grams per liter, the lowest it has even been for Cristal.

The NV Brut Grande Cuvée Grand Siècle No. 24 (Magnum) is ethereal and beautifully lifted. White flowers, mint, white pepper and green orchard fruit all grace this exquisite, super-expressive Champagne. I would cellar the No. 24, as it is pretty tight today and also not ready to deliver the full Grand Siècle experience. The blend is 2007 (60%), 2006 (20%) and 2004 (20%), three vintages that are especially complementary. Disgorged May 27, 2019.

2003 Chapoutier, Hermitage Le Pavillon. On the second night this is a seamless wine of brooding strength. The savory and salty start builds incredible depth of flavor backed by tactile sensation of extract. This is an inky, mouth coating wine with licorice, floral flavors, and new oak. This is an intense, modern wine. **** Now – 2033.

Ruby. Red berries, fruity, rich, intense, oaky notes, not easy to see the grape influence here. Freshish acidity, ripe tannins, rich and ripe and then very oaky, edgy oaky on the palate, good length. 89points

Pierre Peters ‘Les Chetillons’ Blanc de Blancs 2008, 99 points /Nervously close to perfect. I can’t think of a thing I would add or take away to this complete wine. It is walking on a tightrope of acidity, tension, expansive minerality and restrained fruit. There is finesse and power here at once. Devastatingly, my one and only bottle. But worth it. INCREDIBLE.
