Jean-Francois Clouet tekee voimakkaan makuista, viinillistä samppanjaa Bouzyn ja Ambonnayn kylän rypäleistä. Perheellä on kaikkiaan yhdeksän hehtaaria sataprosenttisesti grand cru -luokiteltua viinitarhaa näiden kylien parhailla rinteillä, ja alkuperä on selkeästi maistettavissa lopputuloksesta. Nämä samppanjat suorastaan vaativat ruokaa seurakseen.
