The Story
Harvest: Selected by plot, harvested by hand, grapes transported in small crates, sorted upon reception.
Blend: 70 to 75% Sauvignon (volume, crispness), 25 to 30% Sémillon (structure and aging potential).
Winemaker notes: Whole-cluster direct pressing in the pneumatic press without pumping. Cooling of the must to 8°C for 12 hours and inert gas blanketing. Alcoholic fermentation in barrels. No malolactic fermentation.
