Written Notes

78% Cabernet Sauvignon, 11% Merlot, 7% Petite Sirah, 3% Petit Verdot, 1% Syrah. 91% from the Napa Valley. The 2010 vintage was one of the coolest vintages on record. Fruit from throughout the Napa Valley, from Calistoga to the Oak Knoll District, including much of their own grapes from the William Hill Estate Vineyard, Sage Canyon Vineyard and Ghost Pines Vineyard. Merlot, Petite Sirah, Petite Verdot and Syrah grapes from select sites in Napa and the Monte Rosso Vineyard. After destemming, the grapes were transferred to upright tanks for a two- to three-day cold soak. The must was pumped over up to three times a day with some délestage for the Petite Sirah, Petit Verdot and Syrah lots. Just before the 2011 harvest, the Cabernet legs were blended together and put back into the original barrels to marry together until blending with the other four varieties. The finished wine was aged in a combination of French, American and Hungarian oak barrels with medium to heavy toast levels for approximately 15 months. pH 3.63.
Already a note of mushroom and some tertiary (aged) character. Fine grained, not sweet. Dark fruit and much more savoury than I expected. Succulent. Very hard to tell how it will age. (JH)
