Blend: Sémillon (65%), Sauvignon Blanc (31%) and Muscat à Petits Grains (4%)
Vineyard: Old vines (25 to 60 years). Loamy and gravelly soils. One cluster per shoot.
Winemaking: Picking cluster by cluster. Fermentation In barrels with through native yeast. Ageing for 16 months in French oak from artisan coopers. Unfined but filtered to avoid malolactic fermentation.

"The 2014 Billet Doux contains a little Muscat this year, but unlike the other varieties, the Muscat is not botrytized. The final blend is 60% Semillon, 34% Sauvignon Blanc and 6% Muscat.
