The Story

Blend: 50% Pinot Noir from the right bank of the Marne valley (between Epernay and Dormans) and 50% Pinot Meunier from the right bank of the Marne valley (between Epernay and Dormans).

Vinification: In stainless steel with no malolactic fermentation. The blended reserve wines are matured in oak and the rose color is achieved by blending 10-20% red wine in to the cuvée.

Vinifcation: Racking at cold temperatures (10°C). Alcoholic fermentation in large oak casks (72hl) with native yeasts. No malolactic fermentation.

Blending: Reserve wines aged on fine lees, in oak casks for 12 months. New wines aged stainless steel. Thermo-regulated blending of 85% white wine and 15% red wine. Bottling with slight filtration. Aged ion the bottle, in the cellar for 3-4 years before release.

Dosage: With MCR (grape juice concentrate, made in house), the dosage is adapted to fit the evolution of the wine
