The Story

Derived exclusively from Grand Cru-classified terroirs, this cuvée is composed of Chardonnay from the communes of Oger and Le Mesnil- sur-Oger. Wholly fabricated from the "Cœurs de Cuvée" ("heart of the cuvée"), it is vinified without malolactic fermentation and matured in oak barrels. After several years of ageing in the bottle in our cellars, this cuvée is aimed at true Chardonnay aficionados. Endowed with great freshness and finesse, this cuvée is recommended for aperitif or to accompany seafood dishes.

Wine Information

Origin: 100% Chardonnay from villages of Le Mesnil sur Oger and Oger (Grand-Cru)

Vinifcation: Composed exclusively of first press Chardonnay. Racking at cold temperatures for 30 hours (10°C)

Fermentation: in large oak casks (72hl) with native yeasts. No malolactic fermentation.

Ageing: Aged on fine lees in oak casks 9 months and bottled with very little filtration. Aged in the bottle in the cellar for three to four years before release.

Dosage: with MCR (grape juice concentrate, made in house)the dosage is adapted to the evolution of the wine
