{THE FRUIT}
The Cabernet Sauvignon for Grant Burge’s flagship Shadrach has been sourced entirely from Barossa vineyards, where he believes the conditions are perfect for growing super-premium Cabernet Sauvignon with great finesse, intensity and structure. The 2005/06 growing season was cooler and with good spring rains the Cabernet fruit was exceptional, harvesting commenced once the grapes reached suitable ripening of around 14.5° Baumè.
This wine included 85% from Grant's Corryton Park vineyard from up in the cooler Eden Valley stretches of the Barossa. Grant had wanted to make certain that the vineyard had sufficient age – ten years in this case – to provide quality fruit. Too often, local winemakers will take fruit from very young vines. It doesn't provide the same quality, though decisions to do that are often made purely on economic grounds and can't be avoided. Rock and a hard place stuff, especially for small struggling operations. Grant has had the luxury to wait till it is on song.
Dry herbs, a slight minty/eucalyptus note, cold tea. Dark fruits, a hint of compost. Quite perfumed, this is very pleasantly aromatic. Nicely balanced and certainly more elegance than often found in Barossa cab. Mid length.
As well as the new vineyard source, Grant and Craig Stansborough (chief winemaker for Grant) believe that the improvement in both their oak and their oak suppliers plays a big role. The wines usually see around 50 to 60% new oak.
