Wine Information

The 1991 Private Reserve Cabernet Sauvignon has a beautiful dark ruby color. The aromas of black currant, cherry and toasty oak are especially complex and intense in this vintage. With similar flavors and tremendous depth and richness, this wine will age beautifully for decades and will be one of the great vintages of Georges de Latour.

Vintage 1991

Extremely low winter temperatures forced the grapevines into true dormancy, granting them a respite from four years of stressful drought conditions. Nearly four times the normal rainfall fell in March counteracting the potentially ill effects of another dry winter. Inside Information

The Private Reserve Cabernet Sauvignon was fermented in open-top tanks which allow for aeration during pump overs. This aeration helps to soften the rough tannins of the young wine. In making the blend, only free run wine was used thus eliminating the harshness of the press wine. The wine was aged for 20 months in a mixture of American and French oak barrels which provides great complexity in this wine. The wine was then aged for 18 months in the bottle prior to release.
