The Story

The name ‘Dolomite’ refers to the type of limestone that form the crest of the Niagara Escarpment. Through the forces of erosion, this ancient rock has come to enrich the soils of the hillsides below. Grown along these gentle slopes in our Beamsville Bench vineyard, this Cabernet Franc bears the mark of its origins. The calcareous clays of these sites contribute the mint-berry and spice character that is its hallmark.

Wine Information

Vintage 2018 was a warm vintage with normal precipitation levels and low yields. Cabernet Franc ripened in its normal window, producing succulent wines with fine-grained tannins and long-term agability.

Yield: 2.0 mt/ac (37 hl/ha)

Vinification: 14-day maceration followed by 14-day fermentation using only indigenous yeasts; ageing for 14 months in 225L and 500L oak barrels, 85% neutral and 15% new; the oak was French, Hungarian and Americ...

Written Notes

Very refined Cabernet Franc from Dolomite soils (packed limestone with good dose of magnesium) from Beamsville Bench – Niagara Escarpment. 14-days maceration with 14-days fermentation with indigenous yeasts. Aged for 14 months in 85% neutral and 15% new oak barrels of 225 & 500 litres (French, American and Hungarian oak). Produced 865 cases. TA: 6.0 g/L; RS < 2.0 g/L; Alc: 13.5%.

Medium-intense, purple red colour. Refined, ripe black currant nose with mocha and cacao powder. Medium-bodied, focused palate with super refined tannins and extremely fine mouthwatering acidity. Good fruit concentration with blackberry and blackcurrant notes. In the finish, very refined toastiness, powdery ripe tannins and limestone minerality stands out and forms a great precision to the taste. Peaks in 2025-2030, but can be drunk now. Decant for 4 hours and serve 16-17°C. JL 91p (March 2022)
