Written Notes

This is an estate keen to expand the envelope and to see just what traditional Hunter Semillon can achieve. Here, a small portion of the wine is fermented on skins (usually, a red wine technique), and they have used wild yeasts. It all adds to the complexity and especially the texture. 

The colour here is a near transparent lemon. This is all a little bit exotic. It is young, fresh and intense, a wine of medium length. There are notes of ginger, citrus and a touch of stonefruit. The wine is clean, fresh and crisp, and with that added textural aspect, it is ideal for a gentle style of seafood or possibly chicken. There is some vibrant acidity here. Off dry, but really only in the mildest way. Enjoy now and for the next six years. 93.
