The Story
2.5 hectare Shiraz farm in the Barossa Valley in a nutritious red soil with iron-rich limestone deposits.
First about half of the grapes were cut from the vines and left to dry in the sun. Thus the aromas and sugars condensed. The grapes were then harvested and the fermentation process started in steel tanks. The wine matured for 16 months in oak barrels, with a further 3 months of bottling.
