The Story
Slow fermentation in oak barrels from the forests of France’s Centre region (Allogny and Saint palais).
Vinification and ageing (12 months minimum) take place in our centuries-old cellars where the temperature remains a constant 13°C throughout the year. The wine is stirred regularly to bring lees back into suspension. It is bottles the following winter after being gently filtered. 6000 bottles are produced.
