Wine Description
The Story
Slow fermentation in oak barrels from the forests of France’s Centre region (Allogny and Saint palais).
Vinification and ageing (12 months minimum) take place in our centuries-old cellars where the temperature remains a constant 13°C throughout the year. The wine is stirred regularly to bring lees back into suspension. It is bottles the following winter after being gently filtered. 6000 bottles are produced.
TERROIR
The vines are planted in soil predominantly composed of kimmeridgian limestone marls. The vines are 30 years old on average and are planted in a 1.5 hectare vineyard located in Saint-Laurent-l’Abbaye
CHARACTERISTICS
Complex nose with notes of honey, white flowers and a subtle hint of exotic aromas (coconut, toast, litchi). Lovely minerality on the finish.
Fresh and well-balanced on the palate.
This cuvee stands out for its finesse and freshness on the palate that is characteristic of the 2009 vintage.
SERVING SUGGESTIONS
A good match for saffron risotto with scampi, sauerkraut paired with fish, and bouillabaisse.
Ideal serving temperature : 10°C.
