The Story
GRAPE VARIETY: Sauvignon Blanc
VINE PLOT: 22 hectares
TERROIR: The soil is composed of geological formations dating from the Cretaceous Period (90 million BC). The flint-rich clayey-siliceous soils give the Sauvignon Blanc grape its characteristic taste of gunflint.
WORK IN THE VINEYARD: The vines are cultivated according to the principles of sustainable agriculture.
VINIFICATION: 100% destemming (for greater softness and finesse). Low pressure direct pressing (pneumatic press) in order to extract the highest quality juice. Following cold static settling, fermentation takes place at low temperatures in temperature controlled stainless steel tanks. Aged on fine lees until bottling to preserve all of this wine’s freshness. Filtered only once.
CHARACTERISTICS: Pale gold in colour with a green hue. Expressive nose with notes of citrus fruits and box. A harmonious approach on the palate, supple and delicate with a pleasant freshness. A lingering aromatic finale backed up by a long mineral finish due to the flinty terroir.
SERVING SUGGESTIONS: A perfect accompaniment to grilled sole, pan fried lobster, a terrine of scallops or a goats’ cheese such as the local “Crottin de Chavignol”. Can be enjoyed as an aperitif. Ideal serving temperature: 8 - 10°c. After serving, we recommend allowing this wine to breathe for a short while in order for its aromas to develop to their full potential.
