The Story
Winemaking for the Albariño was kept simple to best express the variety and the hills of Eden Valley where it was grown. The grapes were picked in the cool of the night to retain aromatics, then gently pressed at the winery before fermentation with naturally occurring yeast found on the berries. After fermentation the wine spent a few months on lees prior to bottling.
