The 2023 Lay GG opens with a cool, finely detailed aromatic profile: white peach, lemon zest, green apple, and pear skin, accented by notes of lime blossom, fresh herbs, and subtle white flowers. Beneath the pristine fruit lies a pronounced mineral core of crushed slate, wet stone, and flinty smoke, capturing the Lay vineyard’s shaded, mineral-rich character.

On the palate, the wine is taut, linear, and intensely focused, offering striking clarity and precision. Flavors of stone fruit, citrus oil, grapefruit pith, and crisp orchard fruit move seamlessly across the palate, supported by a firm backbone of saline minerality and fine phenolic grip. The texture is sleek and chiselled, showing impressive concentration without any sense of weight.

The acidity is vibrant, razor-sharp, and perfectly integrated, lending the wine energy, lift, and impressive length. Despite its youthful intensity, the wine remains impeccably balanced, with a sense of restraint and transparency that speaks clearly of site and vintage.

As it opens, subtle notes of white pepper, crushed herbs, smoke, and wet slate add complexity and depth.

The finish is long, mouthwatering, and mineral-driven, echoing with citrus freshness, stone fruit, and a lingering saline-stony imprint.
