George Wyndham is one of the founding fathers of the Australian wine industry having planted Australia’s first commercial Shiraz vineyard in 1830. His innovative spirit is a proud legacy that endures to this day at Wyndham Estate.
Wyndham Estate BIN wines are multiregional blends, with fruit sourced from Australia’s premium viticultural regions. Created to be enjoyed now, BIN wines will also reward short term cellaring. The BIN range of wines reflect the full-flavoured fruit style for which Wyndham Estate is famous.

WINEMAKING
Rigorous assessment of vineyards is essential to identify the fruit style suitable for this wine. Prior to harvest, careful monitoring of the selected vineyards was undertaken by the winemakers to assess flavour development and sugar accumulation. The decision to harvest was based on flavour intensity and varietal character. The fruit was de-stemmed, crushed and inoculated with wine yeast. The temperature range of fermentation was maintained between 20°C and 28°C for periods of 10 to 15 days. The fermenters were pumped over twice every 24hours to irrigate the grape skin cap, thus liberating the rich colour, fruit flavour and balanced tannins. Selected Cabernet Sauvignon parcels were matured in a selection of French and American oak hogsheads prior to blending, stabilising and filtration.


VINTAGE CONDITIONS
Good winter rains were recorded across all grape growing regions throughout South Eastern Australia during winter prior to the 2010 growing season. Ideal cool to mild weather was observed during early spring. This, together with excellent soil moisture profiles, promoted healthy vine canopy development. A period of very warm windy weather was encountered during mid November which impacted on fruit set and resulted in slightly below average yields. Warm to hot weather conditions were encountered early in the season across all viticultural regions, but this was followed by milder weather from early February through to late March as the harvest progressed, creating near-perfect conditions for ripening and reducing pressure on growers and the winery.

Medium to full bodied palate with varietal blackcurrant, spice and plum Cabernet flavours complement integrated toasty oak. Subtle tannins create a soft, lingering finish to the palate.


HISTORY
George Wyndham became the father of Australian Shiraz when he planted the country’s first commercial shiraz vineyard in 1830. It was here, in his vineyard and house that is now a Heritage Listed National Trust Treasure, that he dedicated his life to creating full-flavoured wines. This proud legacy of innovation and dedication endures at Wyndham Estate, where knowledge and experience is built upon by each generation of winemakers. A wider range of distinctively full-flavoured wines are crafted today. Still, Shiraz remains the signature variety of Wyndham Estate - the birthplace of Australian Shiraz.

George Wyndham established 'Dalwood' on the banks of the Hunter River.

George Wyndham planted Australia's first commercial Shiraz vineyard.

1835
First vintage. Due to the extremely hot conditions, "promised to make good vinegar".
1847
George Wyndham imported the first Hereford cattle to mainland Australia.

1860
George Wyndham's total vineyard holdings were the second largest in the colony - producing 11,000 gallons of wine per annum. Exports of Dalwood wines to England and India commenced.

1867
Dalwood vineyards expand to more than 65 acres, principally shiraz, cabernet and white hermitage. These vines were still producing in the late 1950s and were then said to be the oldest wine producing vines in the world.

1870
George Wyndham dies on 24 December (aged 69).

1882
Dalwood awarded the coveted Gold Medal for best Australian wine at Bordeaux, France.

1970
Dalwood wines renamed Wyndham Estate in honour of its founder George Wyndham.

1972
Wyndham Estate BIN range of wines launched

2006
George Wyndham range of wines launched

2007
Wyndham Estate awarded the prestigious Grand Vinitaly Award - the first time ever for a wine producer from the Southern Hemisphere

2010
More than 3,500 rare historic documents recovered and donated to Mitchell Library, New South Wales. "This is arguably the world's largest single collection relating to the running of a colonial vineyard, showing Dalwood's growth from being one of the first vineyards in the Hunter, by 1886, to being the second largest in Australia"says Tracy Bradford, State Library Head of Manuscripts.
