The Chardonnay grapes of Blanc de Blancs Réserve Privée Grand Cru exclusively originate in the famous « Côte des Blancs ». Depending on the needs of the year, the blend includes 20 to 25% of Reserved Wines from that cuvée. Aged for 4 years on the lees, this wine also benefit from a minimum of 8 months of extra age after disgorgement. Like all our wines at Bruno Paillard, its dosage is very low: 5 grams per liter only.
For this specific wine, Bruno Paillard still applies a forgotten wine making technique: During the bottling prior to second fermentation, less yeast is added than in a regular Champagne. Therefore, the fermentation creates a lower pressure (4.5 kg against 6 kg
usually). This type of wine making is especially appropriate for the delicate Chardonnay varietal: It allows it to show all its minerality, finesse, elegance and freshness and balances it with a rarely found creamy texture.
