The Story

The Bruno Paillard N.P.U.- « Nec Plus Ultra » was born from the idea to create the greatest possible Champagne wine, whatever the constraints. To do this, the most extreme choices have been made at each step of the production of this outstanding Champagne wine.
This foolish dream gave birth to the N.P.U.-“Nec Plus Ultra”.

Blend: 50% Chardonnay, 50%  Pinot Noir

Classification: Grand Cru

Dosage: Extra Brut <6 g/L

Only in truly great vintages….
First, an exceptional vintage is needed: after improving our “savoir faire” during the 80’s, the first ever N.P.U – Nec Plus Ultra, a 1990 vintage, was released in 2002. Four follow, each of different temperaments: the generous 1995; the eccentric 1996; and the 1999, maybe the most classic, and 2003.

Vintage 2004

A great example of how large yields do not necessarily mean poor quality in Champagne. As a reaction to the previous year's low yields, the vines produced one of the largest crops on record. The growing season proceeded without major difficulties but the bumper crop called for bud thinning. August brought about cooler weather and some rains, increasing the risk of rot. The massive crop, averaging 13,990 kg/ha, was picked from September 18th onwards. The quality was a pleasant surprise; vibrant wines with appropriate intensity, refined charm and refreshing lightness. This vintage impresses me more and more, and I feel tempted to give it the full five stars. It comes with a rare balance of freshness, lightness, yet fine aromatic intensity. Post-release, this vintage has proven to be slow to age, and elegant wines are likely to keep on ageing gracefully. Dom Pérignon and Louis Roederer Cristal both excelled.

Written Notes

Light yellow colour. Open and complex nose with fresh oceanic aromas of oystershells, some dried apricots and peculiar aroma reminding of foie gras on toasted canapes! Dry and vividly crispy palate shows great intensity and lean pure green apple fruit. Firm and solid but introvert champagne. Benefits from 2-3 years further ageing or if serving now, then decanting for 15 minutes before serving. Serve 8-10°C with sauteed foie gras or with Sole Meunière. JL 88p (9/9/2020)
