Robert Parker's Wine Advocate/ This elegant St.-Emilion has filled out nicely over the last decade. From barrel and post-bottling, I thought it might turn out austere, but that does not appear to be the case. It offers a deep ruby/purple color as well as copious aromas of black cherries, crushed rocks, and earthy undertones. While not a blockbuster, it is beautifully balanced and pure, revealing slightly more depth and richness than I expected. Drink it now and over the next 10-15 years.

The Story

With 30% of Cabernet Franc, Château Canon’s planting is characteristic of Saint-Emilion. The limestone soil reveals the full character of Cabernet Franc, which is a perfect complement to Merlot. The two varieties have long been used together. Cabernet Franc brings freshness, delicacy and structure to Château Canon wines. It makes subtle wines with fine acidity. It gives them great aromatic persistence with varied and complex smoky, roasted and mineral notes

The Merlot grape variety reigns supreme in Saint-Emilion. Its name comes from the local patois and means petite merle (small blackbird) because of its dark colour similar to that of the bird. Restructuring Château Canon’s vineyard has made it possible to plant it 65% to Merlot, bringing it in line with the estate’s original planting scheme. Their wide, dark green leaves are highly indented. They provide shelter for large, long, open clusters of grapes. The small, round grapes are bluish black when ripe and their juicy flesh is particularly sweet. Although hardy, Merlot vines are sensitive to spring frost as they develop early. They thrive in this clay and limestone soil which stays cool even in summer. These engaging Merlots are smooth on the palate, mellow and supple; they have presence and offer roundness in the mouth. Their aromatic complexity is characterised by aromas of red and dark summer fruit. On aging they develop woody and spicy notes. These subtle and refined Merlots with delicate, silky tannins bring smoothness and charm to Château Canon.

Winemaker Notes:The velvety, silky style of Chateau Canon is the magical result of the way its grape varieties benefit from its soil. The limestone containing fossilized starfish makes the wines that grow in it fresh, subtle and elegant. They have a remarkable capacity for aging. Chateau Canon is therefore a wine that requires patience, which over time, slowly reveals its noble qualities.

Vintage 2000

BORDEAUX 2000 – UN MILLÉSIME DE RÊVE

Conditions météorologiques / Le millésime 2000 a été proclamé dès le début comme l’un des meilleurs millésimes des temps modernes. Au printemps 2003, j’ai eu de nombreuses occasions de découvrir si nous avions vraiment un vrai millésime de rêve entre nos mains.

Lors des vendanges 2000, en faisant une « inspection personnelle » dans les vignes, j’ai remarqué que quelque chose d’extraordinaire était en route. Les raisins avaient l’air extrêmement sains.

Pendant que la table de tri roulait, j’ai observé qu’il y avait peu de feuilles, de tiges et de mauvaises herbes parmi les raisins. C’est pourquoi le tri des raisins s’est déroulé si facilement et rapidement. Ce doit être l’une des caractéristiques du millésime 2000, car normalement même les grands millésimes demandent beaucoup de travail à la table de tri.

 

Le millésime 2000 est un Bordeaux classique, extravagant et extrêmement long avec des vins sombres et extrêmement denses, qui ont une énorme concentration de fruits, de longueur et de tanins superbement concentrés. Le tanin n’est pas autorisé à dominer, car il est bien enveloppé par les fruits. Un parfum de sous-maturité n’est présent que dans quelques vins. L’une des marques de fabrique de ce millésime est un arôme intense et profond de baies noires, comme les bleuets, les mûres et les cerises noires.

Tous les cépages rouges ont atteint une maturité parfaite, y compris le cépage le plus capricieux et indiscipliné de Bordeaux, le Petit Verdot. Petit Verdot apporte aux vins l’apport tant attendu de l’épine dorsale et de la puissance.

De plus, les raisins pour les blancs, comme le Sauvignon Blanc, le Sémillon et la Muscadelle, mûrissaient parfaitement et produisaient des vins blancs secs extrêmement fins. Les vins blancs liquoreux se sont malheureusement transformés en quelques vins légers, élégants et charmants, basés à 100% sur les vendanges de septembre. À partir du 11 octobre, il a beaucoup plu à Bordeaux et cela s’est poursuivi jusqu’à la fin de l’année.
