The Story

Grapes are hand-picked. Fermentations last about 3 weeks in temperature-controlled stainless-steel tanks, with frequent pumping-overs and addition of yeasts. Wines are afterward transferred to oak barrels, of which 25% are new, for 14-18 months aging. They are fined and filtered prior to bottling. No press wine is added into the grand vin.

D 12 h / G 4+ h Deep, intense purple colour. Complex bit restrained nose. Dark cassis nose with gamey tones and toasty tones. Floral. Medium-bodied, silky structure, vivid acidity, firm intense and super refined powdery tannins, very concentrated mineral cassis taste. Great integration of oak. Long lingering finish with great harmony. Food match: Roasted duck, grilled steaks, deer Serve: 18C, decant 12 hours At its best: Drinking already, but will peak by 2022 to 2025
