Vinification
Blend of two grape varieties: Pinot Noir 50% - Chardonnay 50%
This cuvée was vinified in vats for 8 months on fine lees before bottling. Dosage: 3,5 gr/L
Ageing
This 2004 Vintage spent 7 long years on its own lees in our cellars, at 10°C. This is an exceptional ageing time for a result which meets our expectations. Balance, complexity, freshness. A great wine!
Tasting
On the eye: Pale gold colours with golden hues, marked by fine and light bubbles.
On the nose: Complex and intense, full of finesse and elegance. Pastry notes of brioche and toasted almonds blend subtly with aromas of honey and figs while bringing out some flowery notes.
On the palate: The mouth confirms this exceptional nose. The attack is silky, then becomes generous and lovely. The finale is endless... A real delight..
Recommendation
Lobster, fresh or slightly fried foie gras, fish, either grilled or with a sauce, scallops, roasted lamb, Parmigiano or Comté cheese.
Vintage 2004
A great example of how large yields do not necessarily mean poor quality in Champagne. As a reaction to the previous year's low yields, the vines produced one of the largest crops on record. The growing season proceeded without major difficulties but the bumper crop called for bud thinning. August brought about cooler weather and some rains, increasing the risk of rot. The massive crop, averaging 13,990 kg/ha, was picked from September 18th onwards. The quality was a pleasant surprise; vibrant wines with appropriate intensity, refined charm and refreshing lightness. This vintage impresses me more and more, and I feel tempted to give it the full five stars. It comes with a rare balance of freshness, lightness, yet fine aromatic intensity. Post-release, this vintage has proven to be slow to age, and elegant wines are likely to keep on ageing gracefully. Dom Pérignon and Louis Roederer Cristal both excelled.
