Origin
This hallmark rosé Champagne starts with intense, fresh red fruit aromas combined beautifully with floral aromas. It is a blend of superb cuvées of white wines with Bouzy Rouge. The Pinot Noir used for the Bouzy Rouge are picked from our confidential « Clos Pierre Paillard » (small Clos of 0,24 acre in the back of the winery)
Vinification
Blend of 2 grape varieties: Chardonnay 70% - Pinot Noir 30% (including 6% of Bouzy Rouge from "Clos Pierre Paillar").
Blend of 2 vintages: Base wine 2010 - Reserve wine 2009
Dosage: 6gr/L
Ageing
Once the bottling is over, each bottle spends 30 months on its lees in our cellars, at 10°C.
This is a very long ageing period in order to obtain the much sought-after balance: "complexity / finesse"
Tasting
On the eye: Crystalline and pale pink colours. The sparkle is tiny and elegant.
On the nose: The first nose is mineral and flowery (Iris bloom) followed by aromas of small red fruit (raspberry, redcurrant) and freshly pressed citrus (grapefruit, mandarin orange). A very elegant nose.
On the palate: Very harmonious. The Chardonnay brings minerality and freshness, blended with more intense notes of wild strawberries. The finale is long and delicious.
Recommendation
Scampi, lobster / Japanese dishes / Mild Asian cooking / low-sugar fruit desserts.
