Wine Information

This cuvée is a sensorial picture of our village. It brings together all of Merfy's various soil types, from Thanetian sands and clays to Cuisian soils. It is typically a blend of three grape varieties, and it is the only non-vintage Champagne of the house. 

Vinification takes place in stainless-steel tanks with indigenous yeasts, and the wines are not filtered.

Written Notes

A harmonious and perfectly poised Champagne with a precise acidity and a richness of fruit and a fine mousse. Baked almond notes enhance fruit notes of lemon and apple. A fine grower champagne of meticulous workmanship.

 

A blend of Chardonnay, Pinot Noir and Pinot Noir; no herbicides are used in the vineyards which are ploughed by horse. A natural fermentation, vinified in a combination of stainless steel and oak barrels.

There is a bit of Selosse in this bottle. Fresh as aromas: lime skin, apple, pear, talc and chamomile. Laser like acidity on the attack: loads of citrus and apple skin. Core turns more broad, with toast and almond, but still so tight. Finish is all salt and chalk. Great expression of terroir driven minerality. Bead is accommodating, and softens the blow of the powerful acidity.

Using older wines as a base, the Chartogne-Taillet is integrated and silky, reminiscent of older champagnes. Notes of shitake mushroom, butter, and brioche fill the nose, while crisp green apple awakens the palate. This champagne is made mostly with Pinot Noir.
