The Story

This Champagne is produced from a one-hectare parcel owned by Salon: "Salon’s garden", and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century. The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at Salon. Headed by Aimé Salon until his death in 1943, the house was then left to his nephew. In 1988, Champagne Laurent-Perrier, a family-owned company, became the majority shareholder of Champagne Salon.

Made from 100% Chardonnay from the Côte des Blancs grand cru vineyard, Le Mesnil-sur- Oger. The densely planted vines are located on the mid-slope in chalky soil, and the Cordon de Royat method of trellising is used, which allows access to the soil at the base of the vines.

The grapes are picked and sorted by hand. Only the first pressing, or cuvée, is used. This is the lightest, freshest juice, containing the highest percentage of acidity, which is essential to the evolution and vivacity of the Champagne. The first fermentation takes place in a stainless steel tank. The wine receives no oak exposure and does not undergo malolactic fermentation.

The wine is cellared in the bottle for an average of 10 years, gaining in complexity and finesse. Riddling is done by hand. All bottles are disgorged within 8 months of the first disgorgement, also by hand.

Wine Information

Champagne Vintage Report by Salon /  Late departure of vegetation, although with extremely favourable weather conditions, the vines developed without a hitch. For all varieties, emergence of very fine clusters. Although the vines had not produced in two years, they gave their very best. Good ripeness of the harvest thanks to superb September sunshine. Harvesting commenced on 17th and 20th September depending on the variety and vineyard. The Chardonnays are well balanced, very fine and elegant.

Vintage 1982

One of the decade’s best vintages, which can be excellently enjoyed already now. The winter was cold and the spring cool. The cold weather moved the start of the growth season and enabled the vines to avoid spring frosts. The inflorescences, which bloomed in June, enjoyed perfect conditions. The warm and sunny weather continued through summer all the way until early September, when refreshing and needed rains arrived in the area. They saved the grapes from overmaturing. The result was an excellent vintage, which in addition to being high-quality was quantitatively one of the biggest harvests ever. The vintage was favorable especially for blanc de blancs. Stylistically, the wines are giving, heavy and rich in nuances. They are now at an excellent age, but can still endure maturing 5–7 years on the average.

A great year in Champagne and a great wine from Salon. This is still
concentrated with notes of citrus, truffles, hazelnuts, coffee beans,
mustard seeds, cloves, and other spices. Has fabulous complexity. There is
still powerful acidity here and wonderful length. It is actually quite
Burgundian. 96.

The Champagne that followed was a beast; we knew it was Salon but we had to guess the vintage. It seemed so young, yet had wisdom about it, much like The Educator himself. Citrus and ‘pink grapefruit’ came from the crowd. This Salon left a Paul Bunyan impression with its bigness and wood. It was yeasty and brawny, yet still fresh and like an infant. The closest I got to guessing was 1979, but this classical 1982 Salon was also some serious heavy metal (97).

Salon 1982 was is unbelievable wine. Very developed, intense and complexe on the nose, with nutty, almost Sherry like aromas. On the palate very precise, the same complexe aromas of bottle age as on the nose, but with beautiful acidity, lingering on for ages in the very precise finish.

TASTINGNOTE Det tog några år innan 82:an fann sig själv. Tretton år gammal blev den underbart harmonisk, om än lite ojämn från flaska till flaska. En klassisk Salon med briljant syra och exceptionellt torr eftersmak av lanolin och smör. Fortfarande smörig, mintig och mycket stramt syrlig även om flera flaskor redan har sett sina bästa dagar. Årgångsbetyg: 5 av 5 poäng. Överproduktionen ledde till att alldeles för många 82:or i dag visar sig hålla sämre än väntat. 1982 var framför allt ett Chardonnay-år. Kommentar från provningen: På sistone har detta vin tappat en del av sin fantastiska smörighet och söta vaniljdrappering tyvärr. Dock är det fortfarande storslaget och tryffeldoftande. Rangordning i provningen: 6:a av 19.
