The 2007 Salon is gorgeous. Weightless, delicate and understated, the 2007 is all class. Today, the 2007 reminds me of the 2004 in its bright, citrus and floral-infused profile, but with a bit more creaminess, mid-palate depth and softer contours, all of which will make the 2007 easy to drink with minimal cellaring. Next to the 2006, the 2007 is quite a bit fresher and more delineated, with none of exuberance, power of tropically-leaning overtones found in its younger sibling. At this stage, the 2007 is a bit inward and closed in on itself. Then again, it is Salon. Dosage is 5 grams per liter. Drink 2020-2047.

A high-toned and ultra-pure nose reflects notes of green apple, citrus peel, petrol and background notes of baked bread and yeast. The moderately intense middle weight flavors are shaped by an impressively fine mousse while delivering very good if not truly superb complexity on the notably saline and dry finish. Salon is virtually always quite refined but the 2007 version is especially so; indeed the word finesse is perfectly apt. I would observe that this could use a bit more overall depth and as such, I would be inclined to allow this to continue to slumber for a few more years first. In sum, this is really lovely and still on the way up. 93/2022+

Salon 2007 is immediately appealing with its pale shades ; cool blonde tones glistening with lemon and green. The bubbles are fine, quick : the very essence of Salon 2007 in all its dynamic luminous energy. In the glass, aromas form a moving backdrop, fresh and bright as sunrise : lemon, lime, yuzu, then green apple, a hint of smoked tea and fresh herbs on wet stone. The palate is focused on backbone and purity : this is the terroir of Le Mesnil taking centre stage, displaying its unique rigour and stony imprint. An electric sensation, sending shiver upon shiver down the spine.

Salon 2007 will shine on, preserved in the darkness of its cellars, asking only to be brought into the light, a shimmering aurora borealis.

The Story

This Champagne is produced from a one-hectare parcel owned by Salon: "Salon’s garden", and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century. The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at Salon. Headed by Aimé Salon until his death in 1943, the house was then left to his nephew. In 1988, Champagne Laurent-Perrier, a family-owned company, became the majority shareholder of Champagne Salon.

Made from 100% Chardonnay from the Côte des Blancs grand cru vineyard, Le Mesnil-sur- Oger. The densely planted vines are located on the mid-slope in chalky soil, and the Cordon de Royat method of trellising is used, which allows access to the soil at the base of the vines.

The grapes are picked and sorted by hand. Only the first pressing, or cuvée, is used. This is the lightest, freshest juice, containing the highest percentage of acidity, which is essential to the evolution and vivacity of the Champagne. The first fermentation takes place in a stainless steel tank. The wine receives no oak exposure and does not undergo malolactic fermentation.

The wine is cellared in the bottle for an average of 10 years, gaining in complexity and finesse. Riddling is done by hand. All bottles are disgorged within 8 months of the first disgorgement, also by hand.

Wine Information

After a mild winter, April was magnificent, and flowering was perfect. June and July brought long days of bright sunshine, the light reverberating on the chalky soil and providing vital residual warmth for the subsequent chilly August. With nature still on- side, the sensible decision would have been to harvest then and there, but then second thoughts....patience! Out came the sun, that great game-changer, charging everything with light and energy. As an uncertain season reached full term, the vines yielded a crop of perfectly ripe grapes, and in decent quantities too. The resulting musts were rich yet not excessive in sugar, with fine acidity to balance. Now for time to work its magic.

Vintage 2007

An unusually warm spring led to early flowering and initial optimism, which soon gave way to disappointment following one of the murkiest summers on record. Overall, 2007 was a difficult vintage saved by last-minute sunshine in late-August. Mildew and rot were the main culprits of the harvest, and the level of gluconic acid rocketed. The harvest began early, on August 24th, and was abundant in volume averaging 14,242 kg/ha. Pinot Meunier posed the biggest problems and Chardonnay clearly outperformed the rest. Many of the iconic prestige cuvée blanc de blancs were successfully produced, such as Taittinger Comtes de Champagne, Ruinart Dom Ruinart, Billecart-Salmon Cuvée Louis and Salon Le Mesnil. Some blended prestige cuvées such as Louis Roederer Cristal and Philipponnat Clos des Goisses were also made. Champagnes from 2007 are typically high in acidity and restrainedly classic in style, but lack the spine and strength of the greatest harvest years. Even if the vintage only receives three stars, its best Chardonnays are well worth seeking and storing.

“The 2007 Salon (Edition 2019) is just starting to show the first signs of aromatic development and nuance, as well as a touch more body than it did upon release. Rich, creamy and ample, with stunning textural richness and freshness, the 2007 is incredibly expressive today, certainly much more so than it was upon release. The 2007 is a dark horse Salon that keeps getting better with time. This is a fabulous showing. Dosage is 6 grams per liter. Disgorged: January, 2019. ”

Served blind. Apples, citrus, minerals, nuanced, detailed, floral notes, scented, not that intense  nose. Refined. 
Fresh acidity, elegant mousse, refreshing and detailed, minerals, so smooth and elegant texture, nothing jumps out, long finish.

“I love how pure, vibrant and appetisingly open the wine is for a young Salon. Lovely sweet lemony tones and exotic floral complexity. The fruit is super bright also on the beautifully textured though tight and succulent palate. It comes with crisp but such balanced acidity seamlessly integrated to the wine’s rich fruitiness. The finish is mineral but feels suitably sweet with its low, 6g/l dosage. A great, approachable and instantly charming Salon.” 95-97

Transparency with a really round undertow. No longer the piercing quality of Le Mesnil but something much more accommodating. Tight bead and intricate crochet work but with lift and great freshness.”

 Champagne Salon produces only one wine, with fruit from a one ha parcel owned by Salon and from 19 other smaller parcels in Mesnil-sur-Oger and it is aged in bottle for an average of 10 years in Salon's chalk cellars. This champagne is always a single harvest, single cru, single grape variety and it is only produced in the best years. In the 20th century only 37 vintages were declared, with an average production of 60,000 bottles for each vintage.

The seas and deep oceans are a veritable treasure trove of delights to match with radiant Salon 2007. The oyster, in all its forms – fresh, in a gratin, as a foam.... Langoustines in tempura, a seabass tartare or ceviche. Scallops, the ultimate treat, pan-fried in a second. On the richer side, a 24-month aged comte or a truffled brie would make a colourful grande finale to any fireworks featuring Salon 2007.
