The Story

This Champagne is produced from a one-hectare parcel owned by Salon: "Salon’s garden", and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century. The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at Salon. Headed by Aimé Salon until his death in 1943, the house was then left to his nephew. In 1988, Champagne Laurent-Perrier, a family-owned company, became the majority shareholder of Champagne Salon.

Made from 100% Chardonnay from the Côte des Blancs grand cru vineyard, Le Mesnil-sur- Oger. The densely planted vines are located on the mid-slope in chalky soil, and the Cordon de Royat method of trellising is used, which allows access to the soil at the base of the vines.

The grapes are picked and sorted by hand. Only the first pressing, or cuvée, is used. This is the lightest, freshest juice, containing the highest percentage of acidity, which is essential to the evolution and vivacity of the Champagne. The first fermentation takes place in a stainless steel tank. The wine receives no oak exposure and does not undergo malolactic fermentation.

The wine is cellared in the bottle for an average of 10 years, gaining in complexity and finesse. Riddling is done by hand. All bottles are disgorged within 8 months of the first disgorgement, also by hand.

Wine Information

1979 / Late bud-burst. Emergence of fine Chardonnay clusters. Rapid flowering of white grapes. Harvesting commenced between 3rd and 8th October, depending on the terroir. The grapes generally all very healthy with alcoholic content exceeding 9° and acidity just below 9°. The 1979 wines are characterised by a very distinct neatness and a particularly striking aromatic power of the Chardonnay.

Vintage 1979

A piercingly cold winter delayed the start of the growing season and was followed by a decidedly cool spring with some frosts in May. As a result, growth was subdued but initial flowering was good. The weather improved in June and July with nice sunshine and gentle heat creating excellent conditions for ripening. Despite rainfall during harvest, sugar and acidity levels remained high and disease pressure didn't mount too much of an assault, producing Champagnes of impressive character and length.

On top of quality, great quantity was also achieved, with an average crop of 11,061 kg/ha being picked between October 3rd and 31st. The Chardonnays were particularly successful and high-yielding. Krug Clos du Mesnil is sheer perfection, going from strength to strength over the years. There are plenty of great Champagnes still in outstanding form. They include Krug Vintage, Louis Roederer Cristal, as well as Lanson Vintage Collection and Noble Cuvée.

Everyone started to stumble out one by one, but those of us that were left were treated to a perfect bottle of 1979 Salon thanks to Bad Boy. That’s what we call ‘and one’ (97).

1979 Salon 92 points (92) Both Didier and I sat and wrinkled our noses together. Why was this bottle so excessively dry and salty? It was like someone had torn the flesh off and only the beautiful skeleton remained. Normally a winning candidate.

TASTINGNOTE Oerhört hård och knuten i många år innan den öppnade upp ett klassiskt valnötsdoftande djup vid fjorton års ålder. Smaken är fortfarande stram, torr och äppelsyrlig. Den mineralrika eftersmaken är skolboksmässig. Årgångsbetyg: 5 av 5 poäng. En helt underbart klassisk årgång med otroligt eleganta viner uppbackade av en stor portion koncentration. Om man tittar på väderleksförhållandena under året var det få faktorer som pekade mot ett toppår. De flesta ’79:or är underbara att dricka nu med sin subtila, rostade och nötiga toner. OM de blir ännu bättre i en senare fas i livet får framtiden utvisa. ’79 Krug var i många år den mest mångfacetterade champagnen och Clos du Mesnil är ännu vassare. Kommentar från provningen: OBS! Väldigt låg nivå (Low shoulder). Flera av oss satt och rynkade på näsan tillsammans. Varför var denna flaska så in i bomben torr och salt? Det var som någon slitit av köttet och endast det vackra skelettet stod kvar. Normalt sett en vinnarkandidat. Rangordning i provningen: 11:a av 19.
