The Tb points given to this wine are the world’s most valid and most up-to-date evaluation of the quality of the wine. The Story

In 2014, Dom Perignon announced that it would be changing the name of its late-release Oenothèque series into a “P2” and “P3” offerings, referring to the second and third “plenitudes” of development in the evolution of a Champagne.

P3 offerings are fully matured, recently disgorged Champagnes that have been stored in the cellars where they were originally made.

The maturation of Dom Pérignon occurs not in a simple linear trajectory, but in successive leaps into new expression, each of which are called Plénitudes. In the long journey of elaboration, the wine goes through this metamorphosis, a transformation. Each Plénitude contributes to Dom Pérignon’s singularity. In the darkness of the cellars, from one plénitude to the next, Dom Pérignon will grow and blossom, transmuting time into energy. 
 

There are three plenitudes in the life of a given vintage: the first window or plenitude is around 6-8 after the vintage. This is when Dom Pérignon Vintage is released.

The second plenitude, or P2, arrives between 12-15 years after vintage, and is about when the energy reaches its climax; showing intensity and vibrancy in high-definition.

 

The third plenitude, P3, comes after around 30 years, when the Champagne has spent more than 20 years on its lees. This is a stage in which maximum complexity is sought, very concentrated, with the most wisdom but with less energy.

The year was marked by two unusually cold periods, in January and April, when frost destroyed about 10 percent of the vineyard.

Flowering was slow and difficult but was given a boost by hot sunshine in early July. The harvest took place in ideal conditions beginning on September 30.

Severe winter temperatures and spring frosts did great damage, leaving many in the region unhopeful of a good year. The destruction was excessive especially in the northern Montagne de Reims, in the hillside vineyards west of Reims and in the Aube. The early summer weather did not raise the hopes, but finally fine September weather came to the rescue and yields ended up being better than feared (albeit tiny, 6,827 kg/ha) when picking commenced on September 30th. Champagnes from 1985 are typically beautifully balanced and intense with great length and character that is still improving today. Dom Pérignon, Charles Heidsieck Champagne Charlie and Blanc des Millénaires, Krug Vintage and Perrier-Jouët Belle Époque excelled, to name a few.

Good looking normal size bottle and in an perfect condition. Colour is straw, and looking bright, deep, full and mature. On the nose it is intense, wide, open, refined, seductive, tempting and rich. The taste is harmonious, focused, vigor, ripe, perfumed, full-bodied, with perfectly balanced, multi-dimensional, complex and good texture structure. On the palate it is layered and has citrus, buttery, herbs, perfumed, pepper, nutty, mineral, honey, toasty, tropical fruits and vanilla flavours. The finish is long, extensive, lingering, flavorful and pure. This wine is sophisticated, exotic and impressive. I paid around 1k-3k€ a bottle. Perfectly stored bottles are still very worthy and will last well for another 10-15 years and decant at least 15min before tasting. Good value for money. I do recommend.

When Father Pierre Perignon took over as cellar master at the Benedictine Abbey of Hautvillers in 1668, his avowed goal was "to make the best wine in the world". For a young monk just 30 years old, it took a visionary spirit and exceptional audacity to pursue such lofty ambitions. An exact contemporary of Louis XIV, Dom Pérignon transformed the history of wine, just as the Sun King revolutionized the very notion of "art de vivre". Wine was the medium for their meeting, as the excellence of "Father Perignon's wine" earned it a place at the king's table.


More than three centuries later, the House of Dom Perignon perpetuates the visionary approach of its founder, widely considered the spiritual father of Champagne. Released only as a vintage, Dom Perignon is cellar aged for at least seven years prior to release. This time is critical for harmonising the flavours and ensuring that the wine’s balance remains elegant, sensual and ethereal. Dom Perignon can also be enjoyed many years later with rare OEnotheque vintages, released by the Chef de Cave at times when the intensity and complexity of the wine has reached optimum levels. Each new vintage is a unique creative act, reinventing the extraordinary style of a wine that only the Chef de Cave may declare a "vintage year".

"The grapes are never the same from one year to the next. If a harvest does not meet Dom Perignon's unyielding standards, there will be no vintage champagne that year. This isn't a value judgment - it's an aesthetic vision" says Dom Pérignon Chef de Cave Richard Geoffroy.

The unique personality of Dom Pérignon is born of this creative commitment. It is this tension between the distinctive qualities of a year and the timeless spirit that defines Dom Perignon, an unparalleled sensation that imparts weightlessness, airy richness and suppleness from first impression to the long-lasting finish.

 

In keeping with Dom Perignon’s expressed ambition in 1668 to create “the best wine in the world”, Dom Perignon Oenotheque represents the supreme homage to this vision.

 

Once the Dom Perignon style has been achieved after seven years and the vintage released, a limited number of bottles are set aside to begin a second period of aging. Six additional years – for a total of no few than thirteen years in the cellar are required to take the wine to another destination : Dom Perignon OEnotheque. The bottles are manually disgorged, liquored and recorked. Each bottle is tasted and approved by a Dom Perignon oenologist, who ensures its excellence before it leaves the cellar.

1. Start by Signing up and creating your profile

- Add a profile picture and more information about yourselves


2. Next, Create your personal Wine World

- Click iFollow (Discover) from the top menu

- Tastingbook has added automatically into your wine world 5-10 of the most active professionals or Pro's as we call them.

- Search for more pros or other users by typing their name in the search field. Then click into my world to those who you want to include in your wine world. This way, you may be notified when they taste wines or comment on them.

- You can also add wines and wine producers into your wine world. This allows you to access the most up-to-date information about them.


3. Invite your friends to join the tastingbook

- Click your username on the top menu and choose invite

- Type your friends email addresses and click send invites

- You can follow the status of your invitation on the same page


4. Create a tasting and do tasting notes

4.1. Click the New tasting button from the top menu.

- Name the tasting as you wish.

- Set the place and time (You can also add your past tasting notes by just changing the date)

- Click the add new wine button on the right to add new wines to the tasting.

- Now go to the box that says 'Click to add the wine'.

- Start by typing the wine or producer name and select the wine from the list that appears.

- After you have selected the wine, the vintage selection will be opened automatically

- Select the correct vintage by clicking on it.


4.2. Next, click My tasting note box and the worlds most advanced tasting

- From the bottom left of the tasting tool you can select in which language you want to use and view tasting notes.

- just do your wine note by clicking the correct adjectives. The adjectives can be activated by clicking once, or de-activated by clicking again.

- Tastingbook Pros will teach you while you taste wines.

At the bottom of the page in the section Show notes of, you may view notes of the professionals by clicking Pro's. If any of the tastingbook pros have tasted the wine before their opinion will show in the gold colored frames around the adjectives on the tasting view.


4.3. After you have completed your wine note, it's time to give Tb points.

Click the box on the bottom right Give points.
In case you want to add any comment or personal thoughts related to this wine, you may tick the note box next to the scores. In this field you may add copy-pasted texts for instance your old notes, etc.


4.4. After you've completed your notes for all the wines, click Close tasting.

You may now share some general thoughts about the tasting or tasted wines and choose with whom you want share your tasting. Set the Tasting privacy to limit the audience who are able to view your tastings information. We suggest you use Everyone as most of the wine experiences are meant to be shared.

Note:

If a wine that you are tasting is not found in our database, please be kind enough to send us an email to: addwine@thetastingbook.com, please include at least the wine name and producer. We will add the wine in tastingbook within 24 hours.


5. Tastingbook is full of information and stories - how to find them.

Tastingbook is full of information about wines, vintages, and wineries and also has over 30.000 pictures of wines. To best way to find what you are looking for is to browse the site from the Browse field in the top right corner.

You may search for wine, vintage, producer, pros or other community members by typing the name in the browse field. You may then choose from the drop down menu.



If you have any difficulty in navigating the site you may easily get help by clicking the support button on the left side of the page
