The Story

Hand harvested with successive sorting, in small crates with sorting in the vineyard. No destemming, no crushing. Gentle gradual pressing of whole grapes, without breaking up the press-cake. Run-off by gravity, racking of the must and vinification in new French-oak barrels. Aged for 10-12 months on the lees.

Written Notes

A wine fermented and aged in different containers, classic barrique, large oak casks but also amphoras, concrete and stainless steel for adding complexity. Intense yellow colour with green hue. Initially slightly closed, the nose opens up slowly displaying multi-layered fruit reminiscent of granadilla, fresh pink grapefruit and tangerine peel, ripe apricots and a whiff of peaches, greengage in the background backed by discreet spiciness with vanilla and cardamom. On the palate well structured with juicy fruit quoting the nose, fine acidity, elegant spiciness and excellent length.
