The Story

This Champagne is produced from a one-hectare parcel owned by Salon: "Salon’s garden", and from 19 other smaller parcels in Mesnil-sur-Oger, chosen by Aimé Salon at the beginning of the century. The wines are cellared in the bottle for an average of 10 years, gaining in complexity and finesse.

The proof that memory and history are important is shown by the bottles in the cellars from nearly all the vintages that have ever been produced at S...

Wine Information

Weather in 2015: After a mild, wet autumn and an uneventful winter without any harsh frosts, a wet spring encouraged early development in the vines, budburst for Chardonnay beginning from 14th April. From mid-May and for the next 3 months, an extended spell of dry, sunny weather settled across the region. Champagne basked in the light. The Chardonnay vines began flowering energetically on 11th June. By early August, veraison was underway, and ...

Vintage 2015

A wet winter and mild spring gave way to an exceptionally dry summer from mid-May onwards. Hot weather prevailed until mid-August, when the skies opened again. Rains gave way to fine, cool, yet sunny weather for the first two weeks of harvest, which commenced on August 29th. The 2015 vintage has a lot of common denominators with the 2003 vintage but the 2015s are showing a better balance of weight and freshness with their average potential alc...

Written Notes

The 2015 vintage is the 44th release in Salon's storied 120-year history. Unusually, it was released ahead of 2014 vintage because of its immediate, polished charm. Sourced entirely from 100% Grand Cru Chardonnay across 20 tiny plots in Le Mesnil-sur-Oger, it was aged for nearly a decade on its fine lees and finished with a classic 6 g/L dosage

The 2015 Salon is a sublime, masterfully tailored triumph that captures a fascinating dual personality—effortlessly straddling the line between the rich, sunny generosity of its harvest year and a remarkably cool, aristocratic precision. In the glass, it radiates a pristine, pale straw-yellow hue with silver-green accents. The mousse is exceptionally delicate, creamy, and persistent, rising in a continuous thread of microscopic pearls.

The bouquet is instantly cerebral, highly complex, and tightly focused. It opens with a distinctive, smoky flint reduction and white floral notes of chamomile and orchard blossoms. As it breathes, the aromatics broaden gracefully to showcase fresh green apple, white peach, and a touch of ripe pineapple. Underneath the bright fruit lies a gorgeous autolytic foundation, revealing intricate secondary aromas of warm pie crust, beeswax, toasted sesame seeds, and a subtle hint of salted toffee.

On the palate, the wine delivers immense concentration, total polish, and a striking structural balance. The entry is incredibly clean and vertical, driven by a racy, mouthwatering spine of limestone-driven acidity typical of Le Mesnil. While it carries the profound depth of old-vine Chardonnay matured for nearly ten years, it completely avoids any hard edges. A pillow-soft, creamy mid-palate seamlessly absorbs a savory, iodine-like mineral thread that builds immense tension. The finish is an absolute powerhouse—broad, mineral-drenched, and endlessly long, leaving behind a persistent finale of citrus zest, sea salt, and a lingering touch of savory spice.

Drinking Window:

True to its legendary pedigree, this bottle shows practically zero vulnerability to oxidation and possesses a structural framework built for eternity. While it is already uniquely open-knit and engagingly approachable to taste today, it holds back an enormous amount of raw potential. It will continue to gain magnificent, toasty tertiary depth in a cellar over the next three decades. Peak drinking window: 2026–2055+

The single-minded expression of a legendary terroir: 100% Chardonnay from the single Grand Cru village of Le Mesnil-sur-Oger (sourced from the historic 1-hectare "Jardin de Salon" and nineteen other small parcel holdings). Vinified with zero oak and systematically suppressing malolactic fermentation, Salon 2015 embraces the natural heat and generosity of the vintage while retaining its signature chiseled, long-distance acid line and chalky backbone.

The nose is luminous, deep, and soaring, opening with aromas of Meyer lemon oil, yellow apple, and white peach, before unfolding into vibrant notes of toasted hazelnut, brioche crust, white spring blossoms, verbena, and crushed limestone. On the palate, the wine possesses extraordinary power and broad structural weight, carried by an ultra-fine, precise mousse. Despite the solar warmth of 2015, the un-malo Blanc de Blancs drive provides a piercing, laser-focused spine of crystalline acidity that stretches the rich, vinous core with absolute authority. The finish is monumental and endlessly long, leaving an intense, mouthwatering trail of saline minerality, citrus peel, and chalk dust. A brilliant, authoritative Salon built for decades in the cellar.

Initially showing a bit of reduction on the nose, this Champagne unfolds with aeration to reveal decadent notes of toasted brioche and smoked hazelnut layered over white peach, baked pineapple, and vibrant tangerine sorbet, all grounded by a distinct mineral streak of chalk and oyster shell. The plush, luxurious mousse delivers a velvety, cashmere-like texture that carries its rich flavor profile effortlessly, cleanly contoured by a beam of chiseled, lemony acidity. Beautiful now, with the structure to develop through 2040. Just 150 cases imported.
