The Story
Hand harvested with successive sorting, in small crates with sorting in the vineyard. No destemming, no crushing. Gentle gradual pressing of whole grapes, without breaking up the press-cake. Run-off by gravity, racking of the must and vinification in new French-oak barrels. Aged for 10-12 months on the lees.
